Easy Peasy Lemon Curd

This recipe for lemon curd is so simple, anyone can do it. (Even a caveman- har har.)


  • 3 eggs
  • 1 c. sugar
  • 1/2 c. fresh lemon juice
  • 1/4 c. butter
  • 1 tbs. lemon zest

In a double boiler, melt your butter. Stir in sugar, eggs, lemon juice and zest. Cook over simmering water for about 15 minutes or until thickened.

Thats it!!!
